AUTHENTIC ITALIAN PIZZA

According to the rules proposed by the “Associazione Vera Pizza Napoletana” the genuine Neapolitan Pizza dough consists of Italian wheat flour (00), natural Napolitan yeast, salt and water. The pizza must be baked for 60-90 seconds in a 485’C (905’ F) stone oven with an oak-wood fire. When cooked it should be crispy, tender and fragrant. Napolitan Pizza has gained the status of “guaranteed traditional specialty” in Italy.

The people of central Italy are passionate about mushrooms and truffle. Mushroom pickers zealously comb the wooded areas from late summer to the end of Autumn. The popular porcino mushroom is just one of they many varieties that find their way into the baskets of mushroom fanciers every year.

Originating in the Palermo area, cannoli were historically prepared as a treat during carnival season, possibly as a fertility symbol; one legend assigns their origin to the harem of Caltanissetta. The dessert eventually became a year-round staple throughout what is now Italy. As with Sicilian cassata, cannoli probably date back to the time of Arab domination.
